Sally's Sassy Stew
Servings: 6-8
Ingredients:
2 pounds ground beef
3 T. vegetable oil
1 Cup Sally's Salsa
1 can (17 oz) whole kernel corn, drained
8 green onions with tops, sliced (about 1 ½ cups)
2 Large minced garlic cloves
1 Can (28 oz) diced Tomatoes
1 t. ground cumin
1 can (15 oz) pinto beans, drained
Salt and Pepper to taste Instructions:
Brown meat with garlic in oil in a 4 Qt Pot; drain. Add tomatoes and juice, Sally's Salsa, cumin, salt and pepper to meat mixture. Bring to boil; reduce heat. Cover and simmer 20 to 30 minutes. Add corn, beans and onions; continue cooking, uncovered, 10 minutes. |
