Sally's Sassy Enchiladas

Ingredients:
1 pound ground beef
Vegetable oil
1 Cup Sally's Salsa
½ Cup Chopped Sweet Yellow Onion
1 ½ Cups (6 ounces) shredded cheddar cheese
¾ t. ground cumin
12 corn tortillas Instructions:
Preheat oven to 350 degrees. Brown meat with onion in 10-inch skillet; drain. Stir in ½ cup of Sally's Salsa and cumin. Heat about ½ inch of oil in small skillet until hot but, not smoking. Quickly fry each tortilla in oil to soften, about 2 seconds on each side; drain on paper towels. Spoon scant ¼ cup meat mixture down center of each tortilla; roll and place seam side down in 13 x 9 x 2 inch baking dish. Spoon remaining Sally's Salsa evenly over enchiladas; cover with cheese. Bake at 350 Degrees for 15 minutes or until hot. |
