Marinated Mushrooms

Ingredients:
1/2 cup chopped onion
2 cloves garlic, minced
1/4 cup olive oil, divided
1/4 cup white wine vinegar
1/2 teaspoon Alamo Grist Mill and Spice Company Seasalt
1/4 teaspoon Alamo Grist Mill and Spice Company Ground Black Pepper
1 pound fresh mushrooms, quartered
2 tablespoons Fresh Oregano , chopped

Instructions:
1. Heat 1 tablespoon oil in a large nonstick skillet. Sauté onion and garlic in oil until translucent.
2. Combine remaining oil, vinegar, salt and pepper. Add mixture to skillet. Heat to a boil. Add mushrooms. Simmer 3 minutes. Add fresh oregano. Refrigerate 24 hours.
