Sassy Pork Tenderloin

Ingredients:
1 whole pork tenderloin (1 ½ pounds)
1 c Sally's Salsera
7 ½ oz pepperoni, chopped
½ c herb croutons, crushed
1 c pineapple juice
3 T chopped fresh cilantro leaves
2 T brown sugar
1 ripe mango, peeled and chopped Instructions:
Put pork between 2 sheets of plastic wrap. Working from the center, pound pork flat in to 14x6 inch rectangle. Remove plastic wrap.
Stir ½ cup of salsa, pepperoni and croutons in medium bowl. Spread mixture lengthwise down in the center of the pork. Fold the sides over the filling to form a 14 inch long roll. Tie pork crosswise at 20inch intervals with kitchen twin.
Add remaining salsa, pineapple juice, cilantro, brown sugar and mango to blender or food processor. Cover and blend until smooth. Pour mixture into 10-inch skillet. Heat over medium-high to boil. Reduce heat to medium-low. Cook and stir for 20 minutes or until sauce thickens.
Lightly oil the grill rack and heat to grill to medium. Grill for 20-30 minutes until cooked through. Turning port over halfway through cooking. Remove pork from grill and let stand 10 minutes. Thinly slice pork and serve with mango sauce. |
