Sassy Snapper

Ingredients:
1/2 medium lemon (sliced thinly)
pepper to taste
2 T Sally's Sassy Salsa
1 Red Snapper Fillet (3/4 pound), cut in half
1/2 C Canned diced tomatoes and green chilies
2 T chopped onion
2 T chopped celery
1 T minced fresh parsley
1/8 t celery seed Instructions:
1. Preheat oven to 350 degrees.
2. Place red snapper in an 11 x 7 baking dish coated with cooking spray. Combine pepper and Sally's Salsa. Lay lemon slices over snapper. Spread Sally's Salsa and Pepper over red snapper.
3. In a small bowl, combine the tomatoes, onion, celery, parsley and celery seek; spoon over snapper. Cover and bake for 25-30 minutes or until fish flakes easily with a fork. Calories: 179 Carbohydrates: 4 g Fiber: 1 g |
