Tomato Bowtie Pasta
Servings: 4-6
Ingredients:
1/2- pound bow tie pasta (about 3 1/2 cups)
1 1/2- pints red and yellow cherry tomatoes, halved
3/4- pound fresh lightly salted mozzarella, cut into 1/2-inch cubes (about 2 cups)
3 - tablespoons olive oil
1- cup fresh basil leaves, cut into strips
1- tablespoon red wine vinegar
3 - tablespoons freshly grated Parmesan cheese
salt- black pepper Instructions:
In a large pot of salted boiling water, cool bow tie pasta.
Meanwhile, combine tomatoes, mozzarella, and 2 tablespoons olive oil in large bowl.
When bow tie pasta is done, rinse
in colander under cool running water, drain again until dry.
Mix all ingredients and chill. |
